Single pot is better, if only because you don't need to source a dual gang pot. There are several ways of wiring a single blend pot: Easiest way is to put the clean into lug 1, effected into lug 3 and take the mix out of the lug 2. This works OK but can allow some bleed through if the effected signal is very strong or the pot value is too small. Increasing the pot value can mean that although the bleed is minimised, there is a dip in level at the middle if the blend. You can use a single pot more effectively if you have an opamp stage as a mix blend amp after the pot, using series resistors on each signal line, and using the pot to pan ground between the two signals: See the deluxe pitch pirate for details of how to do this. A dual pot allows you to effectively set up two completely separate volume pots on each path of the blend.
